Oh, what's that? You didn't know it was the Jewish new year already? Well, neither did I until I noticed it on my calendar this week. Let's celebrate with some delicious Matzo Ball Soup, shall we?
This recipe comes directly from the Streits Passover Matzo Meal box.
1 cup Matzo Meal
4 large eggs
1/4 cup oil or melted margarine (I am pretty sure this is for keeping it Kosher-but I used butter 'cause I'm a rebel like that!)
1/4 cup water
1 tsp. salt
Pinch of ground pepper
Step 1: Mix
Beat eggs well. Add water, oil, salt and pepper.
Mix well.
Add matzo meal and stir thoroughly.
Refrigerate for 1/2 to 1 hour.
Step 2: Form
Partially fill a large pot with water and bring to a boil.
Moisten palms with cold water.
Form mixture into balls about 1" in diameter.
Drop matzo balls into boiling water.
Step 3: Simmer
When all the matzo balls are in the pot, reduce heat to low.
Simmer, covered, for about 30 minutes or until done,
Remove with slotted spoon.
Simmer the matzo balls for 15 minutes in your favorite chicken soup before serving. (Why not use the Easiest Chicken Stock Ever?)
Serve with apples and honey! (Apples and honey are foods served on Rosh Hashanah that symbolize a sweet new year.)
I'm not Jewish, but I sure do like any reason to celebrate something out of the ordinary! Do you celebrate holidays like this, too?
how does that taste? We're not Jewish either , but last year we made a passover meal. It was a great learning experience!
