Muffuletta Sandwiches

Tired of food posts yet? 

Before we get down to business I want to share a photo of my little helper with you.  Whenever I cook, this is where and how my little Brian stands--not because he's waiting for food to drop but because he just genuinely likes to be close to me if possible.  Sweet, right?  Let's just hope I never drop a knife or a pot of boiling water--it's something I fear.  This view is what I see when I am standing in my kitchen and looking down:

...Back on track...  Tonight we enjoyed Muffuletta Sandwiches with veggies and dip and pineapple.  (Yes, I realize that cole slaw was on the menu, but would you believe that I forgot the main ingredient--cabbage--when I went grocery shopping?  Today I frantically checked my receipt thinking "Surely I left a bag at the grocery store."  Nope.  Just plain ol' didn't get it.  Bummer.)

Muffuletta sandwiches are a New Orleans specialty, and man are they good!  (Learn the history of this delicious sandwich here if you're interested.) Mine are by no means authentic, but really it's just the olive salad that I crave when I want a Muffuletta sandwich.  Most of the recipes I have read online use a lot of ingredients and make enough of the olive mixture to make a gazillion sandwiches, but since I want to keep it simple and I really only need enough for a few sandwiches, here's how I make mine:

Muffuletta Olive Salad
1/2 cup green olives (stuffed with pimiento)
1/2 cup Italian Mix Giardiniera (If you don't know what this is, check it out here)
1 T red wine vinegar
1 T olive oil

Pulse all ingredients in food processor until they're small even chunks.  This makes about 1 cup, or enough for about 4 sandwiches. 

Spread this mix on a buttered ciabatta roll with meats and cheeses of your preference, then press on panini press or George Foreman grill and presto (pun intended), you're done!  Yum!

In our house, sandwiches are a perfectly acceptable dinner as long as they're more special than the average cold cut.   In fact, we really enjoy pressed sandwiches for dinner.  What about you?

Back to Blogging!

I am back from my longer than expected blogging hiatus. The longer I kept from writing, the harder it was to return. I found myself uninspired. So, for the sake of my readers and for the sake of keeping myself motivated in my frugal lifestyle, I am back in action!


Right now, we're in the process of selling my beloved Honda Element. I bought it brand new a few years ago and have the premium payments to prove it! We hope to save a few hundred dollars a month by getting rid of this vehicle and acquiring a used small truck. I'll share our progress as it occurs, but in the meantime I am really dreading saying goodbye to my Element. Below is my beautiful (yet ugly... a true paradox, shaped as a box... I like the rhyme!) car in the Shenendoah Mountains in Virginia.


This is the weekend that we're hosting a garage sale so I am in the process of pricing items and getting things organized. It'll be nice to get the pile of "junk" out of the house!


Wednesday of last week James and I celebrated our 4th wedding anniversary. We honored the occasion by spending some quality time together kayaking on Saturday. I honestly couldn't have asked for a better gift. We saw a (dead) loggerhead turtle, nesting pelicans and had several exciting dolphin sightings. One brave dolphin was only a few feet away from the kayak, and since little Brian went with us this time he was in awe all of the beautiful dolphins. (We know this because he made a point to stand up using my shoulders to get a better look at the arching fins of the dolphins--he was fascinated!)


In other great news, I now have a pantry and freezer that is so well-stocked that the only grocery shopping I did this week was at the produce stand! It feels good to know that because of shopping smartly I was able to spend only $18 this week on groceries. Yes!

Great Deals!

This evening, I bought both a tube of Cover Girl Mascara and a vial of Cover Girl nail polish for a total of 20 cents! I used some store coupons and manufacturer's coupons to achieve this-pretty rad, huh? Also, I got two tubes of Colgate Total toothpaste for 32.5 cents each by simply adding some coupons to a CVS promo. Can't beat that!

The best money I have ever spent was the $350 for my dog, Brian. That is a purchase I have never regretted. I hate to call him a "purchase" though. I guess it's about the same as how families spend money to adopt children-not really a purchase as much as proof that you have the capital to support another living being. Anyhow, Brian brings so much joy and happiness to my husband and I, not to mention many many laughs on a daily basis. As he bugs me for attention as I write right now, I can't help but smile and appreciate this precious addition to our little family.
