B.L.A.T. Pizza

When my family and I lived in California, we used to go to a pizza restaurant called "Pepperoni's Pizza". One of the things we loved most at that establishment was the B.L.T. Pizza. I often make this simple pizza with a few shortcuts and with the addition of one of my favorites--avocado.

You need:

1 frozen or take-n-bake cheese pizza

About 6 strips of cooked bacon, chopped

1/2 cup tomato, diced

1/2 head of chopped iceberg or romaine lettuce

1/4 cup ranch dressing (just eyeball it--make sure it's not so much that it makes the lettuce soggy- yuck!)

1 ripe avocado, peeled, pitted and sliced


Top pizza with bacon and tomato; bake the pizza according to package directions. While the pizza is baking, mix the lettuce and ranch. When the pizza comes out, spread the lettuce mixture evenly over it. Top each slice of pizza with a sliver or two of avocado.  Dinner is served!


(If you're not anticipating eating the whole pizza in one sitting, then add the lettuce and avocado on each slice as it's served so that you can store the rest without soggy lettuce on top!)
