Oh Spartans, I made a mistake. I should be eating catfish but instead I'm eating my words, with a side of crow.
You see, I bought the above gorgeous catfish at our local farmer's market on Thursday afternoon. He was $3 and he looked like "good eats" to me. But I never cooked him. And fresh fish needs to be either frozen or eaten very quickly. I did neither. So this little guy lost his life in vain and I tossed away three dollars.
That's food--left behind.
Spartan Living is about my journey toward simplification--a journey I'll be on for the rest of my life. I know I'll never have it perfected. I try hard on a daily basis to uphold the principles I write about but there are days that I fail miserably. So often on a blog we share only the best of ourselves--and leave out all those nagging imperfections. I know I do that. I move clutter and piled-up mail before taking pictures so you don't see the mess that sometimes lives on my counters. I write about not wasting food and then throw food away. I write about keeping a clean house and leave dirty dishes in the sink overnight and let the laundry pile up. Please don't misunderstand--Spartan Living is not a sham--I truly try to hold to the principles that I preach... but sometimes I fail. And I wanted you to know that.
And on that note, I simply cannot decide on a menu this week. I've written three but I don't like any of them.
So, can you help a girl out--what's on your menu this week? Please, inspire me! (Links will be most appreciated if you have them!)
I laugh as I tell myself that I have to put the amazingly good buy spare ribs but am not going to get to them in the freezer - not just think about it :) Thanks for the reminder of what happens when we dont do what we think about.

except I'm using zucchini & beef chorizo. ha.
Also, making some tilapia this week. I like to make it in the crock pot. It's super easy. Mix together plain yogurt, parmesan cheese, garlic, lemon juice, & salt & pepper. Coat the tilapia with it. Stick it in a foil packet. Put some veggies in the bottom of your crockpot with some seasoning & a tiny bit of olive oil. Then put the foil packets on top. Cook onl ow 2-4 hrs. That's it. YUM!
